Chicken Wellington – a great warm weather meal!

This delicious Chicken Wellington is a marinated chicken breast topped with a mushroom duxelle of baby portabella mushrooms, sage, roast garlic and chives, wrapped in a flaky crust, and laid on a bed of long-grain white rice.
