    A lot depends on your definition of "country". You could mean country-western, or country-ecotourism, or country-fishing or hunting lodges.

Long lines, overbooked flights, and your number one preferred resort booked solid are the rules not the exceptions. While these are known issues, don't forget about the weather in general - and in specific - the weather where you are headed. Caribbean cruises can be less expensive in early December than in other times of the year, but the seas still know it is December and they can be a lot more choppy than in October.
