A salmon is definitely an interesting fish.

Imagine a fish that returns to the stream of it's birth having spent interim years at sea - quite an achievement.

Thanks to Alaska's excellent salmon management programs, salmon populations are well protected. By studying and managing the groups of salmon that return to their place of birth (these salmon groups are known as "stocks"), environmental regulators actively protect spawning grounds. Fishing regulations allow for large amounts of spawning salmon to successfully make it to their natal streams.

The Alaska Department of Fish and Game manages 15,000+ salmon streams.

Consumers will certainly taste the difference in "wild" Alaskan sockeye salmon. Known for its rich flavor and firm ruby red meat, wild Alaskan sockeye salmon is an excellent choice for broiling or for outdoor barbecues. Full of healthy Omega-3 oils and caught in Alaska's pristine waters, sockeye salmon are also a local's favorite...surely a positive sign for those of us waiting for delivery of these great products.

Salmon smoking is done in Ketchikan, Alaska located in southeast Alaska (about 700 miles north of Seattle) among some of the richest salmon grounds in the world. Unique within the industry, products are smoked in an Alaskan facility, located right on the docks where salmon are delivered directly from the fishing fleet.

Several forms of smoked salmon are available:

HOT-SMOKED -- This is the traditional Alaskan method of smoking, where salmon is given a heavy smoke at a relatively high temperature. The result is a firm-meat product that easily flakes off. The smoked salmon sides, or portions, are then vacuum-packed in a clear plastic bag and frozen. This form is most familiar to people in the Pacific Northwest.

CANS -- Following a rich history of salmon canning in Alaska, we've tweaked the process to offer a gourmet, specialty smoked seafood product. Cans are hand-filleted, bones are removed, and each piece of smoked salmon is packed individually into a can.

RETORTS -- These are a relatively new form of smoked salmon, combining the shelf-stable qualities of cans with the eye-pleasing presentation of full fillets. Each fillet is placed by hand inside a gold foil "retort" pouch and vacuum sealed. The pouch is then cooked under heat and pressure in the same manner a can would be. (A fillet of fish in a "soft can" is a good way to describe retorts.)
